Healthy Campus - Healthy Eating and Nutrition title banner

UCR Healthy Campus collaborates with campus partners to promote and provide healthy food and beverage choices for our campus community through education, access, and environmental support for nutritious choices. Our goal is to increase the amount of UCR faculty, staff, and students who consume a healthful well-balanced diet consisting of fresh produce, lean protein, whole grains and heart-healthy unsaturated oils, while limiting consumption of highly processed foods, refined grains, sugar, sodium/salt and saturated fat.

  • Improve knowledge of food and nutrition through educational and experiential learning opportunities, academic coursework, and promotion of healthy eating resources on and off campus.
  • Leverage efforts and partnerships to improve food security and access through collaboration with the UC Global Food Initiative and Basic Needs workgroup.
  • Increase and promote healthy food and beverage options at all eating venues on campus through promotion and utilization of the Seeds of Change Philosophy.
    • Seeds of Change is a UCR initiative that promotes healthy and sustainable food that is better for you and the planet (i.e. whole grains, sustainable/local, healthier oils, think produce first and legume based).

  • Promote and provide healthy food and beverage choices for our campus community through promotion and utilization of the Seeds of Change Philosophy.
    • Seeds of Change is a UCR initiative that promotes healthy and sustainable food that is better for you and the planet (i.e. whole grains, sustainable/local, healthier oils, think produce first and legume based).
  • Develop and administer a comprehensive education workshop series in partnership with the Global Food Initiative (GFI) that includes food demonstrations and experiential learning for faculty, staff and students on topics that align with the Seeds of Change philosophy.
  • Collaborate with Dining Services to implement a healthy vending machine policy.

Healthy Cooking and Recipes

The Healthy Eating and Nutrition introduces the Healthy Cooking and Recipes webpage. This new Healthy Campus resource will provide you with recipes for healthy and nutritious meals that you can make at home. Each recipe can be downloaded for your convenience and is accompanied by a cooking YouTube video .

Seeds of Change

Seeds of Change

Promote and provide healthy food and beverage through the Seeds of Change catering menu. The goal is a healthy, well-balanced diet - consisting of options from all food groups - in right-sized portions, with an emphasis on those derived from plants.

Scotty's Convenience Stores

Scotty's Convenience Store (HUB)

Visit the Scotty C-Store by the HUB and see what healthy snack choices are available. Coming this Fall! Healthy Snacks will be identified with healthy campus stickers.

Vending Machine

Healthy Vending Machine

As part of UC Healthy Campus Network, healthier food and beverage options are being introduced into vending machines across the UC system. UCR is pleased to announce that our new vending machine vendor, IntelliVend, will now provide healthier options in our vending machines. The goal is to ensure that at least half (50%) of the options in every vending machine meet the UC Healthy Vending Guidelines.

We are pleased to offer our campus community access to healthy, convenient food. By having healthier options readily available, we encourage you to make choices that support your overall health and well-being.

We offer educational workshops that include food demonstrations and experiential learning for faculty, staff and students on topics that align with the Seeds of Change philosophy in partnership with Highlander Chefs, SRC, UCR Dining, faculty experts, and other community members.
